Hi guys. This week have been hectic and at the same time wonderful. I went to visit my grandma👵 in Lagos state. It's been wonderful meeting my relatives and having good times together . Today, myself and my cousins decided to make some doughnuts and other Nigerian 🇳🇬 fries. lol. She brought the list of things we'd make.

  • Nigerian Chin Chin
  • Nigerian eggroll
  • Doughnut

We started with the Nigerian Egg roll. Which isn't that difficult.

Just like almost all other baking processes. We first Prepared the yeast/sugar complex. Warm water 💧 in a bowl plus yeast then sprinkled a dash of sugar over it. Set it aside for 6mins until it foams. In another bowl we sifted all the dry ingredients together (nutmeg, flour, sugar, salt, paprika and white pepper🌶). Added butter and mixed. Then we added the yeast mixture and mixed. We didn't overwork the dough so as not to make the eggroll too hard then we rolled the dough not too thick or too thin. After all these steps we used the dough to wrap our hard-boiled eggs and allowed to rest for 35mins

After 35mins. We fried the wrapped dough in hot vegetable oil until it turned golden yellow. I can't say the temperature 😂.
