As I mentioned in my previous post last weekend we enjoyed a birthday celebration and since my brother in-law is a steak lover, we decided to have go at making the perfect one.
We sous-vide it for 40 minutes in 55C water and then finished on the charcoal which gives it a very deep flavour. It came up medium, and next time we might reduce the time a little because I like mine more rare. It was the best steak I had so far and I'll definitely use this method again.
We bought free range beef to make sure we use the best meat and we used a hardcore carnivore rub that is great for steaks.
Served with a traditional Polish salad (cooked veggies cut into 0,5 cm cubes with mayo), some grated boiled beetroots and roasted pumpkin.
