Chicken Chapsuey Recipe (My Personal Favorite Vegetable Dish)

Chapsuey is one of the top vegetable dishes in the Philippines cooked with meat (pork, chicken) and shrimp. This dish is made famous by Chinese immigrants and has become one of the most commonly cooked dish in the country. And it has become my personal favorite vegetable dish of all time.

Here's a quick and easy recipe.

Ingredients of Chicken Chapsuey:

½ lb boneless chicken (thinly sliced)
¼ lb shrimp
4 cloves garlic (chopped)
2 tbsp oyster sauce
1 tsp cornstarch
1 cup green bell pepper,sliced
1 cup red bell pepper, sliced
1 head cauliflower, cut into small pieces
½ piece cabbage
1 cup carrots, sliced
1 ½ cup snow peas
1 cup onion, diced
1¼ cup water
3 tablespoons cooking oil
salt and pepper to taste

How to make Chicken Chapsuey:

  1. Heat oil in pan then saute garlic and onion
  2. Add the boneless chicken and saute until in turns light brown.
  3. Add the chicken liver and let cook for 3 minutes more.
  4. Pour 1 cup of water and let it boil. Simmer for 5 minutes.
  5. Add the shrimp then sprinkle some salt and pepper. Stir and cook for 3 minutes.
  6. Add cauliflower and cabbage. Make sure to mix it well.
  7. Add the snow peas, carrots and bell pepper. Simmer for 5 minutes until vegetables are cooked.
  8. Combine cornstarch with ¼ cup of water then pour in the pan. Mix well and continue stirring until the texture thickens.

SERVE HOT AND ENJOY!
