If you are craving for a taste of NY style hotdogs this recipe is just for you. It is a bit spicy for some added kick and twist. You may adjust the measurements to your preference and do a substitute for other ingredients if you so desire.

Ingredients
smoked frank furters or any hot dog you have in your kitchen
1 tsp chillie flakes
1 tsp smoked paprika
2 medium sized shallots thinly sliced
8 pieces bacon cooked
2 tbsp olive oil
dark brown sugar
4 hotdog buns
catsup
hot mustard

Method
Shallots: Slice the shallots (or onions if you prefer)thinly. Heat the pan with two tbsps of olive oil and bring it to medium high heat. Add the the shallots in once they sizzle give them a toss. Cook them until you get the beautiful brown caramelized and translucent look. Turn the heat down to low and add some brown sugar and let it the shallots caramelize further for five to six minutes. Transfer the shallots on a kitchen roll to dry crisply. Spread them out to drain the excess oil. Meanwhile cook the bacon in a pan and set aside. Coat the smoked frank furters with some oil and grill them on a low temperature and cook them through while turning from time to time. Remember to cut some slits on their sides.

Mustard: Combine 200 grams of French’s mustard and add one tsp of smoked paprika then one tsp of chillie flakes and last add one tsp of olive oil. Combine all the ingredients well. You can make a big batch and keep in the fridge to last for a week or so.

Slice the hot dog buns in half then grab a frank furter and put in one of them. Get the bacon and crumble them into the shallots. Dress the hotdogs with the shallots then catsup and hot mustad.
