Ulog #118: Cajun Chicken Burger + Egg Banjo

Back to burgers after a couple of days writing about side dishes.

This is one of my food truck's signature burgers - the Cajun Chicken burger.

A lot of people find it heretic that there is even chicken burgers around as most know a burger as a beef pattied sandwich however, living in Malaysia, there are a lot of people that due to religious beliefs don't take beef. Thus chicken burgers or sandwiches are very popular here in Malaysia.

It's also great for costing as chicken prices are very controlled here in Malaysia and it's one of the more affordable meats compared to beef, lamb, and fish.

Since chicken meat is so assessable here, why not capitalise on that and make a delicious burger out of it. And that's the burger we have here.

The patties are made from a mixture of ground chicken breast and thighs into a mince and then formed into patties. We season them with a special cajun mix of our own as well as flavor it with carotino oil which adds flavor as well as a beautiful golden reddish hue to the patties. It's like a saffron-like cheap alternative technique that I recommend anyone to try.

The burger is paired with a in-house made garlic and lime mayo that's creamy and zesty at the same time, giving the burger another layer of flavor profile making it a perfect combo with the spiced patty.

We serve it with a wholemeal bun that's soft yet has good structure for a burger.

For this burger in the pic, a customer added on a fried egg on the top of it making it a "family reunion" of chicken deliciousness. Thank God for creating chicken for us to enjoy as food! :D
