I know transitioning over to eating all plant base foods can be difficult. But here is a recipe that will help you reminiscent the flavors of one of you favorite meals, pulled pork! Just add your favorite BBQ sauce and make a BBQ pulled pork sandwich, pizza, burritos, etc. Whatever you want to eat it in or eat it by itself. This recipe is super easy and full of vitamins!

Vegan Pulled Pork

Ingredients:

2 cups jack fruit (about a 9 oz can)

1 cup beets (out of the can, not fresh)

1 tbsp liquid smoke

1 tbsp soy sauce

1 tsp chili powder

1 tbsp nutritional yeast

1/4 cup avocado oil

Sea Salt to taste

Directions:

  1. Place all the above ingredients in a food processor or blender and pulse until just combined. It should look like shredded pull pork.
  1. Pour the "pull pork" in a skillet on medium to high heat. Stirring occasionally, cook until the "meat" is starting to have more of a firm texture. (You are cooking some of the moisture out of the fruit so it resembles the texture of pull pork.)

  • Or you can dry it out in the oven at 400F for 10 minutes on each side.
  1. Add your favorite BBQ sauce and enjoy a BBQ pulled pork sandwich! Add some Cole slaw and enjoy!
