"Ginataang Langka" or Jackfruit with coconut milk. "Ginataang Langka with Pork is best if the pork is as tender as it can be. Simmering the pork in coconut milk for several minutes can do this. Do not be afraid to add a cup or more of water to the coconut milk if you think that the pork is not tender enough. The water will eventually evaporate and you will still get that thick creamy coconut sauce.

"The Lumpiang Shanghai" or the boild fish in a wraph and fry. "
Lumpiang Shanghai filled with ground fish,water chestnuts, carrots, and green onions. Golden, crisp and in fun bite-size, these Filipino meat spring rolls are absolutely addicting!

"The Sinigang na Maya-maya" or fish with tamarind soup with tomatoes.
To cook sinigang na maya-maya; Wash and cut kangkong leaves. Peel and seed mango and cut into large strips. Set kangkong and mango strips aside. To make sour broth, saute onion then add tomatoes and mango strips. Cook until tender then add rice washing and bring to a boil. Add fish to sour broth mixture. Simmer and season with salt and Lea & Perrins Worcestershire Sauce. Add vegetables while continuing to simmer broth mixture in low heat. Cover for a few minutes or just when fish is cooked and vegetables are soft but not mushy.

Those are simple recipe but have a very special taste.
