Pineapple Passion Fruit Chicken Stir-Fry

Summer is all about fresh, exciting flavors! Fruity tastes are especially popular during the warmer months, so try out this dish made of sweet pineapple and passionfruit, seasoned and flavored to remind you that, hey! It's summer!

  • What You're Going to Need:
  1. 1 pound of boneless, skinless chicken breast. Cut into 1/2-inch strips.
  2. 1 of 15 oz Del Monte Fruit Salad Tropical. Drained and chopped.
  3. 1/4 cup of water.
  4. 2 teaspoon of Caribbean jerk seasoning.
  5. 2 teaspoons of cornstarch.
  6. 16 oz white rice.
  • Cooking Instructions:

In a small bowl, mix water and cornstarch until smooth.

Coat a large skillet with cooking spray, heat over high medium to high heat. Add Chicken, sprinkle with the jerk seasoning. Stir for five minutes or until no longer pink. Add cornstarch mixture and stir into pan with fruit. Bring to a boil.

Stir for 2 minutes, or until the sauce thickens.

Serve chicken on top of a bed of hot white rice.

This recipe makes four servings.
