Riley's Rainbow Nachos

                                                                   Ingredients

250g low fat beef mince
2 tspoon olive oil
1 cup grated zucchini
1 cup grated carrot
1/2 cup crushed tmato
50g unsalted natural corn chips
2 tbs grated reduced fat tasty cheese
60g cherry tomatoes, halved
1/2 yellow & 1/2 green capsicum, sliced
20g baby spinach leaves
coriander leaves, to garnish
2 tspoon lime juice
2 tbsoop natural yoghurt

                                                                                Method

Heat oil in a small frying pan over medium heat.

Add mince and cook for 5 minutes until well browned.

Add vegetables and crushed tomato and cook for 5 minutes until vegetables are tender.

Preheat grill to medium high.

Pile corn chips onto a heatproof plate.

Grill for 1-2 minutes until warmed and cheese has melted.

Top with mince mixture, cherry tomato, capsicum, spinach and coriander.

Stire lime juice into yoghurt and drizzle over.
