Giant Beets!

Do you think I waited too long to pick my beets?

To save cooking time, I cut them in half before boiling. After 40 minutes, the skins slipped right off.

I cut them into cubes, added some sliced onions, and covered them with a marinade of vinegar, water, sugar and salt. We will be enjoying pickled "giant" beets in a few days.
