BAKED AUBERGINE & TOMATO TOWER


This beautiful baked, layered aubergine and tomato tower is sure to impressed, topped with cheese its a very easy and quick aubergine ( eggplant) recipe. 


It serves 4-6 people and it is perfect as a side dish to compliment your meal, or you can have it as a main course. 


It is a good healthy alternative for a starter it's a perfect vegetarian dish and good filling alternative if you are a meat eater. 



Ingredients


1-2 aubergines/eggplants

2 tomatos

1-3 tbsp of mayonnaise

salt and pepper

grated cheese

1-2 cloves of garlic



Directions 

Step 1 : Cut eggplant and tomatoes into thin rings. In a small bowl, add your chopped garlic with mayo, salt and pepper. Mix well. 

Step 2 : Fry eggplant from both sides 2-3 min and set aside. Brown the tomatoes just for a second on a hot pan and remove immediately. 

Step 3 : Layer the dish, put each layer of eggplant and tomatoes and then add a bit of mayonnaise in between. Do the same until they are layered. Add cheese on top.

Step 4 : Bake for 10 min at 180 C / 350 F.
