HOW TO MAKE MIRROR GLAZE - VIDEO


Mirror glazes can be used to cover the top and the sides of modern cakes, mousse cake or tortes. Covering a cake with a shiny glaze makes it instantaneously chic, professional-looking and also provides the “wow effect“! As you can see above, there is indeed a reason if it’s called “mirror glaze“. And yet it’s so simple to make! Glazing properly, though, takes a bit of practice and a quick movement. Enjoy my step by step video on how to make this beautiful mirror glaze. This is a nice technique to have in your trick bag for those times when you want to add a little glitz and glamor to a cake, torte or bombe. It’s a soft coating, but the trick of added gelatin gives it a shine other simple chocolate glazes don’t have.

Ingredients :
150 gr glucose syrup
150 gr granulated sugar
75 gr Water
10-12 gr gelatin
75 gr Water for gelatin
100 gr condensed milk
150 gr white chocolate
Food colouring of your choice
1 tsp of titanium dioxide ( optional, but makes the glaze less transparent and deeper in colour - this is white food colouring powder)
