GEORGIAN LOBIANI - VIDEO


Lobiani is a traditional Georgian dish of bean-filled bread. The word "Lobiani" comes from the Georgian word for beans which is "Lobio". This "Lobio" or the kidney beans is the most important ingredient for making Lobiani. In this recipe I will show how to make a pastry filled with kidney beans, flavored with fried onions and spices

Ingredients

For the dough:
250 ml Buttermilk ( Kefir) + 250 ml of sour cream
600 gr of plain flour + extra if needed
1 tbsp of salt
2 tbsp of sugar
1 tsp of water
200 gr of unsalted butter

For the filling:
500 gr ( 1 can) of red kidney beans
1- 2 onions
4 cloves of garlic
pinch of dried oregano and basil
pinch of dried coriander
butter 70 gr
pinch of ground red chillies
salt & pepper
walnuts ( optional)
