My Thanksgiving bird made Thai style. It was delicious and a hit with those that had the pleasure of enjoying it. I like duck rather than turkey however I tasted a turkey cooked with honey and butter.

It should always be time to be grateful, but since it's Thanksgiving I'd like to rock out a quick list of things I'm thankful for. I had big plans for this year, but so many unforeseen circumstances arose

Spatchcocked and brined sitting in the fridge for the next 2 days before being thrown in the smoke box and smoked up nicely! I left a little bit of the fat at the bottom just to render it down as it smokes
