Savory Tomato and Chickpea Bulgar

Let me tell you! This is one of the creamiest and most delicious meals I have ever had and you NEED to make this for yourself! Seriously, its so delicious and healthy- lets just say you wont know how to stop eating it!

Its originally created by my mom but she kind of just told me the ingredients and I made it! So here it is:

Ingredients:
-1 tbsp of olive oil
-1 onion (diced)
-1/4 tsp of cumin seeds
-1 green bell pepper (diced)
-2 medium sized tomatoes (diced)
-2 cups of chickpeas
-1 1/2 cups bulgar (washed)- (my cups are technically mugs lolll)
-1 tbsp vegetable broth powder (omit if using vegetable broth)
-Turmeric & Ginger powder to taste
-1 tsp of salt

Directions:

  1. Sautee onions in large pot til translucent (~5 min). Once translucent, add the cumin seeds and cook til fragrant (~30 sec)
  2. Add diced tomato, bell pepper, vegetable broth powder, turmeric, and ginger into the pot and sautee for 5 min (the vegetables should be warm and tender)
  3. Add rinsed bulgar, chickpeas, and water/vegetable broth. Bring mixture to boil and allow it to cook for around 15 minutes, stirring frequently.
  4. At this point, the bulgar should have absorbed a good amount of liquid. Reduce the heat to a low and allow it to simmer for around 5 to 10 minutes.
  5. Taste test time: try the bulgar. If its still got a little bite to it as though not fully cooked, dont worry!- just add 1/2 cup of boiling water and let it simmer for another 5 to 10 minutes.
  6. Enjoy! Personally I like to let everything sit and cool a bit for like an hour and then dig in!
