This is MOM she is 9 years old, she lives in my fridge and hangs out outside for a couple hours a day to strech. First I double feed MOM equal parts bread flour and H20 the night before I want to make bread.
The next step is parting out my bread flour/rye flour, H20, and MOM and mixing them together.
The way I mix is, combine all 3 into a bowl and mix with a wooden spoon for 6 minutes, rest for 15 minutes then add some salt and mix for 15 more minutes.
I then let it rest overnight and in the morning i then form the bread
place in a bowl with a floured up towel and let it proof for about 2 hours.
then bake it for 25 in a dutch oven covered, with some water in a different bowl for the steam, remove the cover and cook another 25 minutes and boom done.
