Hello, friends! Last week, I wrote about how in August my friend and I went mushroom picking, and the forest was full of chanterelles, which I collected almost a full bucket. Well, the forest was also filled with another type of chanterelle – the yellowing chanterelle (Cantharellus lutescens). I still hesitate to add this mushroom to my bucket because I’ve never collected it before. Mushroom guides say it’s edible. However, I already have plenty of mushrooms stored at home – dried, pickled, and frozen – so my wife wouldn’t understand me 😉.Привіт, друзі! Минулого тижня я писав про те, як у серпні я зі своїм другом їздив по гриби і про те, що у лісі було дуже багато лисичок, яких я назбирав майже повне відро. Так ось, у лісі також було дуже багато й іншого виду лисичок - лисички жовтіючої (Cantharellus lutescens). Я ще не наважаюся збирати цей гриб до свого відра, бо ніколи його не збирав. Грибні довідники пишуть, що він їстівний. Але у мене вдома і так дуже багато грибів зберігається у сушеному, маринованому та мороженому вигляді, тому моя дружина мене б не зрозуміла 😉.

Here's what specialized websites say about yellowing chanterelles: their caps, 3-8 cm in diameter, resemble deep funnels. Thin, with wavy or even torn edges, they seem to "age" over time, as their surface becomes smoother, though it starts off radially fibrous or wrinkled. The cap color ranges from yellow-brown to reddish-brown, sometimes even brownish. The hymenophore (the lower folds of the mushroom) is initially smooth but wrinkles over time. The folds are thin, sparse, and vein-like on the surface, often with uneven edges. At first, they are orange-yellow or pinkish-red, but later they turn gray.This mushroom has white spore powder, and the spores themselves measure 10-12 by 6-8 microns. The stem reaches 5-8 cm in height and, although narrow (0.5-1 cm), is quite sturdy, even when curved, with longitudinal folds and a hollow center. Its color varies from yellow-red to lemon-yellow.The flesh of the mushroom is dense and brittle, with a strong, pleasant aroma. This mushroom is considered edible (category 4), but it must be pre-boiled for 15 minutes before it can be fried, boiled, or pickled.Ось що пишуть про лисички жовтіючі спеціалізовані сайти: їхні шапки, діаметром 3-8 см, схожі на глибокі лійки. Тонкі, з хвилястими чи навіть рваними краями, вони ніби з часом втомлюються, адже з віком їхня поверхня стає гладшою, хоча спочатку радіально-волокниста чи зморшкувата. Колір шапки коливається від жовто-коричневого до рудувато-коричневого, іноді навіть коричнево-бурого. Гіменофор (так називаються нижні складки гриба) спочатку гладенький, а з часом зморщується. Складки тоненькі, рідкі, немов жили на поверхні, часто з нерівним краєм. Спочатку вони оранжево-жовті, іноді рожево-червонуваті, але пізніше набувають сірого відтінку. Цей гриб має білий споровий порошок, а спори розміром 10-12 на 6-8 мікронів. Ніжка у висоту досягає 5-8 см, і хоч вузька (0,5-1 см), вона досить міцна, навіть якщо вигнута, з поздовжніми складками та пустою серединою. Її колір варіюється від жовто-червоного до лимонно-жовтого.М'якоть гриба щільна і ламка, з сильним приємним ароматом. Цей гриб вважається їстівним (категорія 4), але його потрібно попередньо відварити протягом 15 хвилин, а потім можна сміливо смажити, варити чи маринувати.
