I understand your point, but I think the bigger question is what the New Testament shows the Church actually doing after Christ’s resurrection.

The issue isn't simply whether Genesis 2 uses the word “Sabbath.” Genesis says God blessed and sanctified the seventh day, and Exodus later explicitly identifies that day as the Sabbath.

But after the Resurrection, we repeatedly see Christians gathering on the first day: Jesus rose on the first day (Mark 16:9), appeared to the disciples that day (John 20:19), appeared again on the following first day (John 20:26), and the disciples gathered to break bread on the first day in Acts 20:7.

So I agree that Scripture should be our foundation. But Scripture also shows the Church gathering on Sunday because of Christ's Resurrection. That is why Catholics don't claim that Jesus simply said, “Change the Sabbath to Sunday.” The practice is understood from the whole New Testament witness, not from one isolated verse.
