Instructions
1- Heat the Stones:
- Place the river stones on a metal rack situated above a gas stove.
- Heat them until they are extremely hot.
2- Prep the Pan:
- Gently heat the Le Creuset enameled cast iron pot on a separate burner.
- Once warm, remove it from the heat and set it on a wooden cutting board.
3- Prepare Ingredients:
- Thinly slice the sweet potato and onion.
- Shred the cabbage and thinly slice the apple.
4- Layer Ingredients:
- Lay the shredded cabbage as a base in the heated pot.
- Place the chicken liver on top of the cabbage.
5- Add Vegetables:
- Arrange the sliced apple, onion, and sweet potato over the chicken liver.
6- Season and Liquid:
- Season with salt and crushed black pepper.
- Pour in fresh orange juice and a sufficient amount of water for steam generation.
7- Stone Placement:
- Use tongs to carefully transfer the hot river stones into the pot over the ingredients.
8- Seal and Cook:
- Immediately cover the pot with its lid.
- Allow the steam and high temperature of the stones to cook the contents for at least 10 minutes.
9- Finish and Serve:
- Remove the stones carefully using oven mitts.
- Serve the Khorkhog hot.
