They are perfect on their own or as a side dish to complement hearty meals like Chicken Paprikash. Whether you have a spaetzle maker or are using a colander, follow this guide to create delicious dumplings that will transport you to the heart of Hungarian cuisine.
Ingredients
馃 3 large eggs (preferably Organic Valley)
馃 1/2 cup water (filtered, such as from a Brita filter)
馃 2 teaspoons salt (use Morton table salt)
馃崥 2 cups all-purpose flour (King Arthur flour recommended)
馃 2 tablespoons butter (unsalted, such as Land O'Lakes)
Instructions
1- Prepare the Dough:
- In a large mixing bowl, whisk the eggs and water until well combined.
- Add the salt and gradually mix in the flour, stirring continuously to ensure a smooth, lump-free batter.
2- Shape the Dumplings:
- If using a spaetzle maker (e.g., a Westmark Spaetzle Maker), pour the dough into the device and press over a pot of boiling salted water.
- Alternatively, press the dough through a large slotted spoon or a colander (such as OXO) held over the pot. Let the dumplings drop into the water.
3- Cook:
- Boil the dumplings until they rise to the surface, approximately 2-3 minutes.
4- Finish:
- Scoop them out with a slotted spoon and place them into a colander to drain any excess water.
- Add the butter to the warm dumplings and stir gently until the butter melts and the dumplings are well coated.
