Egyptian Beef Shawarma with Tahini Sauce

Ingredients

🥩 1/2 kg 1 LB Sirloin steak, tri tip, or ribeye (No specific brand mentioned)
🧅 1/4 cup Finely grated onion with juices
🍷 1 tablespoon White vinegar for marinade
🧂 1/2 teaspoon Salt
🌶️ 1/2 teaspoon Black pepper
🧄 1/2 teaspoon Garlic powder
🌿 1/2 teaspoon Cumin
🌿 1/2 teaspoon Coriander
🍂 1/4 heaped teaspoon Cinnamon
🍂 1/4 heaped teaspoon Allspice
🥄 3 tablespoons Lamb fat (or substitute with beef fat, ghee, or olive oil)
🧅 1 Large red onion, sliced
🍅 2 Medium tomatoes, diced
🌿 1/3 cup Chopped parsley
🥄 1/2 cup Tahini (sesame paste) (Brand not visible)
🥛 1/4 cup Greek yogurt (Brand not visible)
🍋 2 tablespoons Lime juice
🍷 2 teaspoons Vinegar
💧 1/4 cup Cold water
🧂 1/2 teaspoon Salt
🌿 1/8 teaspoon Cumin
🌿 1/8 teaspoon Coriander
🌶️ Pinch of Cayenne pepper


Instructions

1- Prepare the Beef:

  • Freeze the beef for 2-3 hours to facilitate thin slicing.
  • Cut thin slices of beef against the grain using a sharp chef's knife.

2- Prepare the Marinade:

  • In a small bowl, mix grated onion, 1 tablespoon vinegar, salt, pepper, garlic powder, cumin, coriander, cinnamon, and allspice until combined.

3- Marinate the Beef:

  • Place sliced beef in a Pyrex mixing bowl and coat thoroughly with the marinade.
  • Refrigerate for 12-24 hours uncovered.

4- Cook the Shawarma Meat:

  • Preheat a Lodge cast iron skillet over low heat and add lamb fat. Render until golden; discard solids.
  • Increase heat to high, add marinated beef, and cook until browned. Add sliced onions and cook for another minute.
  • Stir in diced tomatoes, 4 tablespoons of vinegar, and chopped parsley. Mix well and remove from heat.

5- Prepare the Tahini Sauce:

  • In a ceramic bowl, whisk tahini, yogurt, lime juice, and vinegar until smooth. Gradually add cold water until the mixture reaches a pourable consistency.
  • Season with salt, cumin, coriander, and a pinch of cayenne pepper.

6- Assemble and Serve:

  • Fill dinner rolls with shawarma and drizzle with tahini sauce. Alternatively, wrap in tortillas and press on a griddle or panini press until golden.
