🥣 2 cups Alitkane Couscous Moyen Medium granule
🚰 200 ml Water for moistening couscous
🫒 3 tablespoons Olive Oil

For the Lamb and Vegetable Stew:
🐑 Lamb Chops/Shanks Use sufficient quantity
🫒 Olive Oil Approximately 3-4 tablespoons for sautéing
🧅 1 Medium Onion diced
🧄 3-4 cloves Garlic minced or sliced
🌿 1-2 teaspoons Cumin Powder
🌿 1-2 teaspoons Coriander Powder
🌿 1-2 teaspoons Turmeric Powder
🌿 1-2 teaspoons Ginger Powder
🌶️ 1-2 teaspoons Paprika Powder
🧂 Salt Approximately 1-2 teaspoons
🍅 1 Medium Tomato diced
🍅 1 cup Tomato Sauce
🌿 ½ cup Fresh Coriander chopped plus more for garnish
🥕 4-5 Medium Carrots cut into large pieces
🌿 ¼ Large Cabbage cut into wedges
🍠 2-3 Medium Turnips peeled and quartered
🥫 1 cup Chickpeas canned or pre-soaked
🥒 4-5 Small Zucchini cut into large pieces
🌶️ 2-3 Bell Peppers mixed colors, cut into large strips
🚰 Water for simmering stew
🎃 Pumpkin/Squash cut into wedges
🥬 Leeks cut into pieces
Instructions
1- Sauté Aromatics:
- In a large pot, heat olive oil over medium heat.
- Add diced onions and minced garlic, sauté until softened.
2- Add Spices:
- Incorporate cumin, coriander, turmeric, ginger, paprika, and salt.
- Stir well and let them bloom with the onions and garlic to release aromatic flavors.
3- Brown the Lamb:
- Add lamb chops or shanks, ensuring they get a nice brown crust on all sides.
4- Add Initial Vegetables & Liquids:
- Stir in diced tomatoes, tomato sauce, carrots, cabbage, turnips, and chickpeas.
- Add chopped coriander and enough water to cover everything.
- Season with additional salt if necessary.
5- Initial Simmer:
- Bring to a boil, reduce to low heat, and let simmer for 1 to 1.5 hours.
6- Add Final Vegetables:
- Add zucchini and bell pepper strips, cooking for another 30-40 minutes until all vegetables are tender.
7- Moisten Couscous (First Stage):
- On a large plate, combine couscous with 3 tablespoons olive oil, adding a pinch of salt if desired.
- Carefully mix with fingers to break clumps, then gradually add 200 ml water.
8- First Steaming:
- Place the moistened couscous in the steamer over boiling water/stew pot.
- Steam for 20 minutes.
9- Moisten Couscous (Second Stage):
- Transfer couscous back to the plate. Break up clumps, adding cinnamon, olive oil, and water if desired.
- Mix thoroughly.
10- Second Steaming:
- Return to steamer and steam for another 20 minutes.
11- Final Steaming:
- Repeat moistening, adding cinnamon or olive oil as desired.
- Steam for a final 20 minutes, tasting to ensure fluffy, tender grains.
12- Serving Suggestions:
- Arrange couscous on a large serving dish.
- Drizzle a generous amount of stew sauce over the couscous.
- Top with lamb pieces and arrange vegetables around, garnishing with fresh coriander.
- Serve hot with bread or as is.
