Ingredients
🐔 1 whole chicken
🥕 3 carrots, roughly chopped
🌿 A few stalks of celery, chopped
💧 4 cups water
🧂 2 teaspoons salt
🌮 3 tortillas, cut into pieces soaked in water
🧅 6-8 scallions, chopped
🎃 1/4 cup pumpkin seeds toasted
🌾 1/4 cup sesame seeds toasted
🌶️ 2 Serrano chili peppers roasted and de-seeded
🍅 3 tomatillos roasted
🌿 1 bunch cilantro divided
🍚 1 cup white rice
Instructions
1- Prepare the Chicken Stock:
- In a Cuisinart large pot, place a whole chicken along with chopped carrots and celery.
- Add 4 cups of water and 2 teaspoons of salt. Cook over medium heat for about 1 hour until the chicken is tender.
- Remove the chicken, allow it to cool for 5-10 minutes, then shred the meat. Strain and reserve the chicken broth.
2- Prepare the Green Sauce Base:
- Soak 3 pieces of tortillas in water.
- In a dry frying pan, toast 1/4 cup pumpkin seeds and 1/4 cup sesame seeds until golden.
- Roast 2 Serrano peppers and 3 tomatillos in the same pan until slightly charred.
- Add toasted seeds, roasted vegetables, and chopped scallions into the Nutribullet.
- Include soaked tortilla pieces and part of the cilantro. Pour 1 cup of reserved broth and blend until smooth.
3- Combine and Simmer:
- Pour the green sauce into a clean pot, and mix in the shredded chicken.
- Add 1 cup of chicken broth, adjusting for sauce consistency.
- Simmer over medium-low heat for 25-30 minutes to meld flavors.
4- Prepare White Rice (Optional):
- Use about 2 cups of the remaining chicken broth to cook 1 cup of white rice.
