Quick little recipe idea, I got the idea from my favourite Mexican juice bar 'Liquid Prana'. Chia is so healthy because the seed itself is a complete protein and one of the richest sources of omega-3 fatty acids. They also absorb water quickly and can take in up to 10 times their weight in liquid, creating a gel-like texture. The small seeds are a power house of nutrients and were a staple food source in the ancient Aztec and Maya diets

Along with all the health benefits you get from chia seeds, the fact they retain so much water helps to leave you fuller for longer and less prone to snacking throughout the day.

To make chia seed water you literally just drop a teaspoon of chia into your distilled or filtered water and leave them to soak till they become gel like around the edges. I tend to leave mine overnight in the fridge. I then added fresh lime juice and Himalayan salt to mine.
