Molto importante prima di iniziare il lavoro è sterilizzare i tappi e i barattoli che utilizzeremo, per una corretta igienizzazione seguire le indicazioni del Ministero della Salute. Prima sterilizzate i barattoli di vetro e i tappi facendoli bollire, poi riempite una ciotola d'acqua e spremete il succo di 2 limoni all'interno, questo servirà per conservare i carciofi puliti senza farli annerire. Mettiamo i barattoli in una pentola capiente dove metteremo l'acqua fino a coprirli, accendiamo il gas.
