I have come to observe that most people usually pick exotic dishes as their favourites and that's something. Strangely though, if I list my top ten dishes, not a single intercontinental dish will make it. My partner playfully calls me a local champion for that, but it is what it is. Most intercontinental, especially western-styled foods are not filling for me.

My favourite food is a Nigerian local dish of Eba and Okra soup. I've always enjoyed this food since my childhood and it has held this position since I can remember. There are so many ways to go about preparing it, depending on one's particular taste, but no matter how you go about it, it will always be one of the best delicacies you will ever have.

Eba is made using cassava flakes. It's spread in boiling water until a semi-solid formation is gotten. As it cools, it will harden more into a solid form. While the Okra soup is made using the fruit of Abelmoschus esculentus. It can be sliced, chopped, grated or mashed. Either way, it is the main ingredient of the soup. I prefer it mashed because when it's not mashed, I will chew it and the resultant slime can spoil the whole experience for me.

My mum used to make the best Okra soup when I still made time to go home and visit. I haven't done that in a while. Maybe I will soon.
