  1. Mutton pieces

  2. Basmati rice

  3. Onions (sliced)

  4. Tomatoes (chopped)

  5. Ginger-garlic paste

  6. Biryani masala

  7. Red chili powder

  8. Turmeric powder

  9. Yogurt

  10. Mint leaves

  11. Coriander leaves

  12. Ghee

  13. Cooking oil

  14. Whole spices (bay leaves, cinnamon, cardamom, cloves)

Steps:

  1. Marinate mutton with yogurt, ginger-garlic paste, biryani masala, red chili powder, and turmeric. Let it marinate for a few hours or overnight.

  1. Rinse and soak basmati rice for 30 minutes. Cook it until 70% done. Drain and set aside.

  1. In a large pot, heat oil and ghee. Add whole spices and sliced onions. Sauté until onions turn golden brown.

  1. Cover the pot with a tight lid and cook on low heat until the rice is fully cooked and mutton is tender. This is called "dum" cooking.
