This is a post dedicated to the cooking surface of this skillet.
This flat skillet is a family heirloom. I find the surface comforting. Now, as I write, I realize that might be because I’ve seen that surface since I was a child. Seeing that surface triggers a feeling of “the good ol’ days” or simpler times from which it came.
I like to cook eggs on it.
It’s great for tortillas and flat steaks.

For oil I usually use ghee.
