I spent the last week taking some time to sharpen the knives with my stone. It's been hard and frustrating work, partly because I'm not very good at getting both sides even, and partly because the etchings and chips make it damn near impossible to get a consistent edge.

Nevertheless I lubed up my stone and got to work. For a lubricant I use just a regular olive oil, which I'm pretty sure is not supposed to be what you use. When I first got the stone I used exclusively water, but at some point I got impatient soaking it every time and I opted for oil. I think I'm supposed to use mineral oil, though. Don't tell anybody.
I went to work on the carving knife first. I spent a lot of time trying to get the sides to smooth out, and I got a lot of iron off of it and onto the stone, but ultimately I gave up to work on the cutting edge.
After a couple of sessions and some careful honing, I got it fairly sharp.
The bigger knife took a much longer time, and of course I didn't get any pictures of the actual process. I did get a picture of the edge after a good amount of rubbin'.
Kinda better but not really. It's a good thing that these are going to be purely ornamental...
Anyways! Up next is going to be a bread post. I made some ciabatta and it went ok. It's actually pretty good.
