A hot bowl of noodle soup is the one meal that will take you through the coldest days when the temperature drops! I grew up eating traditional chicken noodle soup!

In California, where we are blessed with an abundance of restaurants serving authentic ethnic cuisines, pho is for me another delicious choice and a mainstay of Vietnamese cooking.

The main ingredients of pho, a Vietnamese soup, are broth, noodles, beef, or another protein, and an assortment of toppings. The rich and flavorful broth is simultaneously clean and revitalizing.

Pho is a favorite, and it's incredibly filling!

A large bowl is essential. Enough room is required for all the delectable ingredients! After adding the noodles and meat to the dish, the heated broth is poured on top. The toppings are placed in another plate, and you can select your favorites.

Pho is eaten with a soup spoon and chopsticks. While the spoon is used to slurp up the broth, the chopsticks aid in taking up the garnishes. Picking up your bowl at the end to take the final sips is also quite acceptable!

We were both served the standard toppings of bean sprouts, basil leaves, jalapeno slices, and lime slices.

We also had spring rolls! This is a classic Vietnamese recipe called gỏi cuốn which combines shrimp, tiny tender pork pieces, fresh vegetables, and herbs with a delicious hoisin and peanut dipping sauce.

What is pho without the classic drink? We had Vietnamese Iced Coffee and Thai Iced Tea.

The Vietnamese Iced Coffee is simply dark roast coffee and sweetened condensed milk, whereas the Thai Iced Tea is made of Thai tea, sugar, and evaporated milk!

You may have pho at any time of day and throughout the year, so don't limit it to cold days.
