Pumpkins come in different shapes, sizes, and color.
The classic ones, called Traditional Orange Pumpkins, are perfect for eating. They have a mild flavor.
I love it roasted (because it is easy). After cleaning it, put the entire thing in the over. You can roast whole pumpkins the oven.
Sometimes when they are small enough, I split it in half, remove the seeds, and the roast it. I use a spoon to scrape out all the seeds and stringy pulp from the cavity.
At times, when I have more time, I slice the pumpkin into strips, salt it, the roast. What temperature? If you're roasting, roast at 400 F for 35 to 45 minutes or until the flesh is soft.
Or I bake it into casseroles, or soups, or make it into a puree for a favorite pumpkin pie.
Have you tried Pumpkin Quesadillas or Pumpkin Tortilla Soup? I must remember to give you the recipe when I make those!

Pumpkins are also great for carving into Jack-o-lanterns! Jack-o-lanterns are associated with Halloween and I will write about that closer to the date, which is October 31.
