The never-ending day-to-day life sometimes seems overwhelming. A small informal gathering can certainly uplift and encourage you, making you ready again and re-energized you for the difficulties of life.
With only tid-bits of planning you can have a very small get-together with friends! I had four of my next-door neighbors in my home.
Lilian gave me the Coquito Recipe: 1 can cream coconut, 1 can condensed milk, 1 can evaporated milk, 1 cup Puerto Rican white rum or Bicardi Rum, 1 tsp cinnamon, 1 tsp nutmeg, and place it in a blender to mix!
She said it was a standard drink in Puerto Rican households during Christmas time.
I provided the drinks, fruits, cheese and potato salad. The potato salad was easy to make using boiled potatoes, celery, onions, hard-boiled eggs, mayonnaise, salt and pepper.
We had lots of fun and loads of laughter, telling each other the funniest thing that happened to us this year!
.Three and a half hours was not long enough. Were it not the time to prepare dinner, we could have stayed our visit much longer.
Between the five of us, we consumed all the food, save the one persimmon, an orange and a few grapes! I think it was the rum, and the Pinot!
