The Paco vegetable is the edible fern vegetable. Filipinos loves to eat fern vegetable salad. I do love it. 😀

Yesterday, when I arrived home I am craving for some specialty of my mother. So after few minutes of resting and fixing myself, I go to town to buy some foods at the market. I also bought 3 bundles of fern vegetables that cost ₱10 or $0.20 per bundle. And I bought some ingredients and others.

From the market, I go back at home and prepare some dish for our lunch meal. My mother helps me preparing the dish. Actually, it is my mother who all do the preparation of our dish especially the preparation of the fern vegetable salad. Because, my mother feels that I am tired and don't have a good sleep from the trip. I am so happy and grateful for my mother's love. 🥰

My mother helps me of washing, cleaning and cutting the soft part only of the fern leaves. And my mother do the cooking actually. 🥰

Anyways, even it is not me who did the preparation and even we did not use magic I still use the Magic Shikika in my title. Because, it is me who is sharing the recipe tonight. 😀

Let me show you all how my mother did it. 😀

Ingredients:

Paco Vegetable
Onion
Tomato
Ginger
Vinegar
Calamansi juice
Salt
Stir fry shredded coconut meat

Procedures:

Wash, clean and cut the soft part of the fern vegetable leaves from the hard part.
Wash and slice onion, tomato and ginger.
Boil water and add the fern vegetables when it boils. And cook it half cook only. Then, remove from the boiling water and set aside.
Shred coconut meat. Just a little amount that will be enough to mix at the fern vegetables.
Stir fry the shredded coconut meat until it turns golden brown.
In a bowl, put vinegar, calamansi juice, onion, tomato, ginger and salt.
Add the boiled fern vegetables.
Mix well and add the stir fry shredded coconut.
Mix well and serve. The healthy and delicious fern vegetable salad is ready! 😋
