We cooked sambar at least once a week. This recipe is a South Indian dish and one of the nutritious easy to cook dish I know.
The dish is composed of lentils and mixture of different veggies ( a little of everything )
You can put different kinds of veggie, but mainly the vellery pumpkin, shallots drumsticks are important in making sambar. They add to the real taste of savoury sambar.
I am happy to share to you how I cook our
all time favourite sambar. I cooked this dish early in the morning and it serve us breakfast to lunch till dinner.
Ingredients:
orange Lentils 1/4 cups
Garlic 2pcs.
[ Veggies, a little bit of any available you have
Okra
Vellery pumpkin
Drumstick
Pumpkin
Small eggplant
Zucchini
Carrots
Green banana
Tamarind
For tempering
Shallots
Mustard seed
Curry leaves
Sambar powder
Green chili
Procedure:
Boil lentils for till cooked
Add in crushed garlic
Add in soaked tamarind juice to lentils.
Add in veggies except okra .
Add in tomato, put lid, bring to boil in low fire till veggies are cooked.
Meanwhile, heat oil in a pan. Splutter mustard seed, shallots, curry leaves, chili and sambar powder, saute in a very low fire to avoid sambar powder to get burn.
Add the mixture to lentils. Stir and let it cook for few minutes.
Add in salt
Add in okra.
Simmer for few more minutes.
Sambar is ready to serve with dosa , rice or chappati.
Note:
Soak lemon size tamarind in a warm water.
Adjust the salt if necessary.
Put in a very low fire, not to burn sambar powder.
Sambar is packed with nutritious and full of fiber dish. All at one, protein from lentils and vitamins in veggies.
