Hello good people. Hope all is well. Today's cooking is a very healthy & yummy sambar, and it's a traditional dish mainly from south india.
This vegan dish is best served with dosa/ fermented rice or even a plain rice.

I am happy to share, how I cook my sambar.
So let's get started.

INGRIDIENTS:

Vegetables:

Shallots 6-7 pcs.
Small egglant 6pcs.
Okra 50 grms
Drumstiks 1pc.
Taro root 1 pc.
Cluster beans 20grms
Vellery veg. 500grms
Green plantain 1pc
Potato 1 pc.
Curry leaves 1 sprig

All vegetables cut into small pieces except shallots.

Spices:

Mustard seed 1tbspn
Sambar powder 1tspn
Salt
Tamarind small pc.

Procedure:

● prepare & chopped necessary ingredients

● Cook & boil lentils.

● when the lentils is cooked. Add in onion, crush garlic, turmeric, chili & tomatoes.

● Slow Cook tomatoes and herbs. Cover. Stir occasionally.

● Meanwhile, Heat oil in a pan, once hot splutter mustard seeds & curry leaves

● Add in vegetables that takes time to cook such as drumsticks, shallots & green banana. Mix vegetables, saute for few minutes.

● Add in sambar powder & salt.

● Add in soaked tamarind juice to lentils.

● Add in sauteed vegetables in the lentils

● Add in vegetables that are easily to cook, such as okra, vellery etc.

● Mix vegetables, simmer for few minutes till vegetables are soft.

● Your sambar is ready to serve
