We always eat beans in our family, It’s one of our staple foods. It’s delicious, easy and budget-friendly. We usually used the Green beans or Mung beans. We incorporate other vegetables or we eat with fried fish or meat. This hearty soup is full of flavor. You can eat it alone or serve with a bed of rice.
There are many variations of Mung beans soup per region and one denominator is, It’s a delish comfort soup for many in the Philippines.
So without much further ado, here is my own version
I Soaked the Mung beans overnight for easy cooking, but you can slow cooked them on your stove top until done.
Ingredients
Mung beans ½ cup
Water 4 - 5 cups
Garlic, crushed and chopped
Onion, diced
Tomato, chopped
Shrimp paste/Fish sauce (optional)
Squash, chopped
Eggplant, wedge
Procedure
Boil the Mung beans in salted water for about 30 minutes and set aside
In the same pan with preheated oil, Saute the garlic and onion
Add the tomato and stir until it gets mushy. (The brown on the sides are from the Mung beans)
Add the shrimp paste or fish sauce and continue stirring. Let it sit for few minutes.
Add the chopped squash and eggplant and mix
Add the boiled Mung beans and Mix
Add some water and simmer for few minutes
Season with salt according to your preference
Serve warm and Enjoy!
