For my entry into today's smartphonephotography challenge, I'm sharing a photo that I took this morning after making myself a delicious breakfast. Given that it's the weekend, I have quite a bit more time than a typical rushed weekday to prepare a more interesting breakfast for myself. I got the inspiration for today's recipe for one of my cousins.
It's a pretty fun idea, and works great as a food to take on the go or to pack up easily for later. I like to call these "breakfast muffins" given their striking appearance to muffins. You can really put as many ingredients into the "muffins" as possible, but I personally chose to use several veggies including spinach, red peppers, green peppers, tomatoes, and carrots. In addition I also included some cheese as well as some thinly-sliced ham which I used to wrap up a few of my muffins. Then to hold everything together, I used some fresh eggs which allowed my breakfast muffins to solidify and rise very nicely.
