This was what my sister cooked for us for our breakfast. Ube Pancakes!
During this pandemic, Good Sheperd/ Mountain Maid Training center, which is known for their food souvenirs has been handing out free jars of ube jam to the hospitals. Each of us from my workplace was able to bring home 1 jar each. With this jam we were thinking of what we can make with it.
We decided to make ube Pancakes. These were just the ingredients, ube Jam and Pancake Mix.
In the pancake mix my sister added egg and instead of using water she added milk so it would make it flavorful and then she added a jar of ube. The photo below shows how the batter looks like.
She added a little oil on the pan so it wouldn't stick

What I did with mine, I added some more ube on top because I love the creamy, rich and delicious taste. In my mind "There's no such thing as too much ube haha". I topped it with cheese because it's saltiness complements it really well. I also added maple syrup. This was really a good meal.
