(A) 간병(肝病)과 상극(相克)인 음식물
- 간염(肝炎)과 양고기와 개고기 :
간염에 걸린 사람들이 양고기와 개고기를먹을 경우 병정이 가중된다. 또 비둘기 고기 역시 간염 환자들에게 불리하다. 이들에 대한 임상 실험 보고들이 있다.
- 간염과 깡통 음식 :
깡통 음식 속에는 대부분 일정량의 벤조산(Benzoic Acid)과 같은 방부제가 들어 있다. 이러한 방부제에는 약간의 독성이 있는데 정상인들에게는 아무런 해가 없지만 간염이 있는 환자들에게는 해가 있다. 왜냐하면 모든 독은 간장에서 해독시켜 주는데 간염 환자가 깡통 음식을 먹을 경우 간에 부담을 가중시켜 주기 때문이다.
- 간염과 계란 노른자 :
달걀 노른자에는 영양분이 많이 들어 있다. 그러나 간염 환자가 달걀 노른자를 먹을 경우 간장에 부담을 줌으로 간염 회복에 불리한 영향을 미친다. 달걀 노른자 속에는 대량의 지방과 콜레스테롤이 함유되어 있으며 이들은 간장내에서 대사가 이루어 진다. 그러므로 간염 환자는 달걀 노른자를 삼가하는 것이 좋다. 달걀 흰자위 속에 들어있는 콜린(Cholin : 비타민B 복합체의 하나)과 메티오닌(Methionine) 등은 간장 속에 지방의 축적을 억제하는 작용을 해주기 때문에 간기능을 회복시켜 준다. 그러므로 간염 환자들은 달걀의 흰자위 만 먹으면 간기능 회복에 유익하다.
- 간염과 생강 :
생강은 Gingerole 과 휘발성 유(油)와 수지(樹脂)와 전분을 포함하고 있다. 그러나 변질된 생강 속에는 황장소(黃樟素 : Safrole, C10H10O2)가 들어 있다. Gingerole 과 황장소는 간염 환자의 간세포를 괴사시키거나 변성(變性)시키고 간질(間質) 조직을 증생시킨다. 고로 간기능이 더욱 악화된다. 간염 환자들이 생강을 날로 먹으면 간장의 병을 회복시키기는 커녕 병정을 더욱 악화시킨다. 그러므로 간염 환자들은 생강을 먹으면 해롭다.
- 간염과 고지방 음식 :
간염 환자는 高지방, 高콜레스테롤 음식물을 피해야 한다. 고지방 음식은 간에 중성지방을 축적시켜 지방간(脂肪肝)을 형성한다. 동시에 콜레스테롤의 함량이 높은 생선알과 계란 노른자와 돼지의 간과 돼지의 뇌 등은 피해야 된다.
- 간경화와 기름기가 많은 음식과 고단백 식품 :

- 간경화(肝硬化)와 기름에 튀긴 음식 :
간경화와 복수(腹水) 환자들은 기름에 튀긴 음식과 기름에 부치거나 지진 음식과 불에 구운 고기 등을 피하는 것이 유리하다. 이와 같은 지방질 음식들은 인체내에서 연소 후 Acrolein(丙烯醛)라는 일종의 화학 물질을 생성한다. Acrolein(丙烯醛)은 혈액을 타고 간으로 들어가서 간의 실질(實質 : Parenchyma) 세포를 자극한다.
- 간경화와 술 :
술의 대사는 간에서 이루어 진다. 그러나 간경화가 있는 사람들의 간장의 해독 기능은 감약된다. 그럼에도 불구하고 간경화 환자가 술을 마시면 간장의 부담이 가중된다.
- 간경화와 푸린의 함량이 높은 음식물 :
푸린(Purine : 요산 화합물의 原質)의 대사는 간에서 이루어 진다. 푸린의 대사 산물은 요산(尿酸)인데 신장을 통해서 체외로 배설된다. 또 푸린의 대사와 배설은 심장에서 충분한 혈액의 공급을 필요로 한다. 그런데 간경화 환자들의 심장과 간과 콩팥의 기능은 매우 약하다. 그러므로 심장과 간과 콩팥에 부담을 덜 주기 위해서는 푸린의 함량이 높은 음식물의 섭취를 줄이는 것이 현명하다. 푸린의 함량이 높은 음식물은 돼지의 간과 돼지의 콩팥과 시금치와 콩과 완두(豌豆)와 동부Cowpea) 등이 있다.
- 간경화와 단단한 음식물 :
