Here are the ingredients:
Toppings:
In a mixing bowl or any big bowl you have, first mix the two sugar and add the two eggs. Mix them well.
Add oil and vanilla, mix until well incorporated. Pour the buttermilk and mix it.
Strain the flour mixture and mix it until no lumps, sometimes I add thw flour in half so that it will be easier to mix but be careful not to over mix the mixture.
Add the mashed banana and mix it until everything is smooth. Scoop one cup of the mixture and put it in a separate bowl/cup.
Add 2 Tablespoon chocolate ganache (1:1 ratio), this is a leftover from my previous cake project. Mix it to the one cup mixture.
I'm using a greased and lined with baking paper 8x12" pan, pour all of the plain mixture. Now slowly pour the chocolate flavored mixture make a zigzag line then using a skewer draw a another zigzag opposite to first one to make marble look. You can play with it in any direction, make it marbled in any way you like.
Add the toppings evenly, you can put more or less as you like. In using chocolate as topping when baking, do not use chilled chocolate or else it will sink at the bottom. You can also coat the chocolate with flour to make sure it stay at the top specially if you're using chocolate chips.
Pre-heat oven at 180°C, bake it for 25-30 minutes. Do toothpick test at 25 minutes, if it comes out clean it is cooked. If not, bake it for another 5 minutes.
I cut it in 2x2" then put a cupcake liner so the kids can hold it easily and not too messy. This is good for kids snack and can also be included at kids birthday. Not too sweet but we need to be careful if there is peanut because some kids are allergic to it.
I personally love making snacks for my kids, I'm sure of what they are eating. I'm a slightly picky mom specially when it comes to food because I'm afraid that they might be sick. There are a lot of hospitals which refuses to check up people who do not undergo swab test first. I'm afraid that this can't be done if the kids are in emergency situation. That's why prevention is always better than cure.
I hope that all of us are doing well, specially our loved ones.
Stay safe everyone!
See you on my next blog!
