If you're a fellow Bangladeshi, then you surely know about the much recent craze around kacchi biriyani. Pretty sure we've all witnessed the booming growth of the kacchi biriyani restaurant business around us.
How every now and then a new restaurant or branch pops up out of nowhere. I don't know who or what started this craze or "trend" but I bet it was Sultan's Dine. Before Sultan's Dine came into the restaurant business, there wasn't much of a hype behind kacchi biriyani or biriyani itself. Yes, some of the older "well known" restaurants were always there. Yet, most of those places always had issues with hygiene and the food wasn't even that good to be honest.
Back then, about a decade ago I guess, you'd barely see many people mentioning or talking about kacchi biriyani. It was a somewhat simple dish that you'd find in the usual deshi households every now and then, especially during the weekends. And that's how people used to like it, homemade kacchi, made with love, by our mothers.
Well, that's how it always was for me at least. Luckily, it all still remains that way to this day.
Now, I'm not a guy who spends a lot of time or money behind restaurant food. I like to sit at the table with my family and enjoy a somewhat healthy meal together. It works this way because from a young age I was taught to eat at home only, a lot of restrictions and no's and don'ts.
Always being told about how a lot of restaurant food isn't healthy for you. And throughout the years I found out why that is, it all started making sense soon enough. As we kept on getting news about how most restaurants use expired or poor quality ingredients over here.
And I believe that is truly the reason why, that even to this day I prefer homemade food, especially kacchi. My mother surely does make a solid kacchi and I'm not even choosing sides or being biased, it is what it is to be honest. In seems that in present time my mother has somewhat mastered the art of making kacchi biriyani haha. That is why me and my two younger brothers wait quite eagerly for those days, when we would suddenly get a hint and smell of kacchi biryani wreaking havoc around the house all of a sudden lol.
We're never asked or told about any of it in advance. We would mostly be clueless for half of the day, not knowing that the dish of the day is going to be kacchi or polao even. My mother always keeps it a secret, and when the food is cooked around mid-way, the people present in the house finally get to know "what's cookin" quite naturally.
Then my mother probably goes like...

Then I just run up to the kitchen with my phone to get some decent clicks. After that the plan is to either share the images on social media or to send them to someone I plan to annoy haha.
The overall presentation this time did look quite good. Sadly, I don't know what's wrong with my phone, I guess it's not so accurate when it comes to focusing on the main object, especially if it's something up close. That's why some of the areas seems a bit out of focus, making the food look mushy.
You got to trust me on this one, it wasn't mushy at all and it was what you call in Bangla quite "jhor jhora" haha.
Enough with the details and presentation, all we really care about is eating to be honest, no lie there.
Soon enough, we got our plates and sat down to eat. My youngest brother looked really happy after finding out that kacchi was on the menu. If it was possible, then he would probably eat kacchi day and night, 24/7. I myself and the other family members prefer to balance it out by changing it all up every now and then.
Yet, since we barely get to "wine and dine" at restaurants, we try to cherish these simple moments where the family is sitting together and enjoying some good food at home. That is why around the weekends we try to arrange and cook something a bit special. So that it turns out to be a day which is quite simple, yet memorable as well.
Just remember one thing, if you still have your family, friends and loved ones around you, then just know that you're one of the lucky ones. Try to enjoy the little, very simple details and moments of life, these moments won't be here forever.
So, if you decide to live it well and enjoy these moments to the fullest, then at the end of the day, you'll at least have some memories worth cherishing.
