Ingredients
🎃 2-3 kg sweet pumpkin, peeled, deseeded, and diced into 2-3 cm cubes
💧 2.4 liters water
🍬 1 kg sugar
🥄 12 ladles 840 ml of 9% vinegar
🌿 20-30 pieces of cloves
🧂 MARSK salt visible
Instructions
1- Prepare the Pumpkin:
- Begin by peeling, deseeding, and dicing your sweet pumpkin into cubes about 2-3 cm in size.
- Aim for uniform pieces to ensure even cooking.
2- Create the Marinade:
- In a large stainless steel pot, combine the water and sugar.
- Place it over medium heat on the induction cooktop.
3- Dissolve the Sugar:
- Using a wooden spoon, stir the mixture until all the sugar has dissolved completely.
- Aim for a clear solution.
4- Add Vinegar:
- Carefully measure 12 ladles of 9% vinegar.
- Add it to the sugar solution and stir well to mix thoroughly.
5- Spice it Up:
- Introduce cloves to the marinade.
- This step gives it a fragrant and spicy undertone.
6- Bring to a Boil:
- Increase the heat to bring the marinade to a rolling boil.
7- Simmer and Cook:
- Lower the heat to the minimum setting on your cooktop.
- Add the diced pumpkin to the pot, stirring occasionally.
- Let it simmer until the pumpkin pieces turn translucent, approximately 15-19 minutes.
8- Jar the Pumpkin:
- Using a stainless steel ladle, carefully fill clean, sterilized glass jars (e.g., Jamar brand) with the hot pumpkin and marinade.
9- Seal and Cool:
- Secure the lids on the jars.
- Leave them at room temperature overnight to cool. The cooling process helps seal and develop flavors.
