🍶 1 tbsp sake
🍯 1 tbsp brown sugar
🧄 1 clove garlic, minced
🫒 1 tbsp cooking oil
🍚 2 cups cooked white rice

🥚 1 Egg yolk

Instructions

1- Prepare the Sauce Base:

  • In a small stainless steel mixing bowl, combine soy sauce, mirin, minced garlic, sake, and brown sugar.
  • Mix thoroughly until well combined using a wooden stirring spoon.

2- Simmer the Sauce:

  • Transfer the sauce mixture to a small stainless steel saucepan.
  • Bring it to a light boil on an induction cooktop, then reduce the heat and simmer for 2 minutes.
  • Remove from heat and set aside.

3- Brown the Pork:

  • Heat a non-stick frying pan with a hexagonal pattern over medium-high heat.
  • Add 1 tbsp of cooking oil from an oil squeeze bottle and place the pork slices into the pan.
  • Brown lightly on both sides. Remove from the pan using stainless steel tongs.

4- Finish the Sauce:

6- Assemble the Rice Bowl:

  • In a ceramic serving bowl with a dark rim, place cooked white rice.
  • Arrange the sticky pork slices around the rice.

7- Garnish (Optional):

  • Garnish with chopped scallions.
  • Place an egg yolk on top.

8- Caramelize (Optional):

  • Use a culinary torch to lightly torch the pork for an additional caramelized finish.

Cooking Tips

  • Sauce Texture: Ensure the sauce is glossy before adding the pork. Proper reduction results in a sticky texture.
  • Caramelization: Continuously stir the pork in the sauce until a rich glaze forms for optimal flavor.
  • Garnish Carefully: When using an egg yolk, the pork's heat will gently warm it, enhancing richness.
