🌿 1 medium Kolokasi Taro root
💧 Enough water to cover Kolokasi for boiling

🥛 Charalambides Christis Fresh Milk Full Fat 3% 100ml initially, plus more if needed
🌰 Nutmeg a pinch
🧂 Salt a pinch
🌶️ Pepper a pinch
🍯 Pomegranate Molasses 1 tablespoon
🍇 Balsamic Vinegar 1 tablespoon
🥬 Fresh arugula leaves for garnish
Instructions
1- Prepare the Kolokasi:
- Peel the Kolokasi using a chef's knife.
- Use a kitchen towel to hold it securely while peeling.
2- Chop the Kolokasi:
- Chop the peeled Kolokasi into medium-sized chunks of even size.
3- Boil the Kolokasi:
- Place the chunks in a pot and cover them completely with water.
- Cover the pot with a lid and simmer on an induction cooktop for 25 minutes, until tender.
4- Prepare the Drizzle:
- In a small ceramic bowl, mix pomegranate molasses and balsamic vinegar.
5- Process the Kolokasi:
- Once the Kolokasi is cooked, drain it and transfer to a food processor.
- Add Charalambides Christis Margarine, nutmeg, salt, pepper, and some Fresh Milk.
- Blend the mixture until smooth. Adjust consistency by adding more milk if needed.
6- Plate the Purée:
