So today, I will be preparing plantain and bitterleaf sauce, plantain contains antioxidants including vitamins and the combination of it with bitterleaf is so healthy. Bitterleaf on the other hand washes the belly and prevents indigestion and that is why we love eating it in our house.
Ingredients used are:
Bitterleaf
Onions
Fish
Groundnut oil
Plantain
Cowskin
Seasoning cube and salt
Pepper
The preparation
I washed the bitterleaf thoroughly and kept it aside. Then I also wash the cowskin, and the fish as well and I set them aside to proceed with some other things.
I peeled off the plantain and then poured it inside a clean pot, I added a small quantity of water, I also added salt to give it a perfect taste then put it on the burner to boil.
While the plantain was boiling, I put another put on the burner, allowed it to dry then poured groundnut oil inside.
I also allowed the groundnut oil to get hot, and after that, I poured the sliced onions into it.
While the onion was frying I added the seasoning turned it then added the blended pepper inside as well.
I allowed it to fry a little before I added the washed cowskin into the sauce and then I turned it so that the seasoning could influence the cowskin.
While that was frying, I removed the boiled plantain from the burner because it was done already and then I fried the fish and set it aside.
By the time I was done frying the fish, the stew had steamed very well so I just added the washed bitterleaf into it and I turned it.
After some minutes, I added my fried fish to the sauce and allowed it to fry a little bit so that the seasoning could influence the fish as well.
The plantain and bitterleaf sauce were ready to be served.
As you can see in the picture it looks very delicious and it tastes so good as well.
