Festival of Diwali is here and so I tried making something new by experimenting with my traditional method of making sweets.
Here today I am going to make milk khoya and Gramflour sweets with sugar syrup with a topping of dry fruits on it.
Ingredients
3 litre full cream milk
1 cup Gramflour (besan)
2 cup sugar for making syrup base
1 cup water for making syrup base
Dry fruits for topping.
Let's start making it
•• Pour the raw milk in a wok. I am using am Iron wok here but any thick bottomed pan will work here.
•• keep stirring it at regular intervals, it will keep boiling and Reducing with time. Keep the flame of gas to low-medium.
In this way you finish your other works side by side.
If you have nothing to do, and you want to make it fast, then keep the flame to high and keep stirring at short intervals. Then it will take lesser time to get thickened.
•• Once the milk get slightly thickened, add Gramflour in it. And mix it well.
•• Keep stirring it often, after adding Gram flour you have to stir if often or it will stick to the bottom.
•• Let's make sugar syrup (Chaasni) side by side. So On the other stove, pour water in the pan and as it comes to boil add sugar to it and mix it well. Let it boil for 10-15 minutes. You have to make single strand syrup base. As it comes to desired consistency, switch off the flame.
•• As it is thickened, and leave the edges of the pan, that means mixture is ready. Pour the sugar syrup in the wok and mix it well with the mixture.
•• After mixing it well, pour the whole mixture in a greased plate. Alternatively you can put butter paper on the plate if available.
Add the slices of dry fruits above the mixture and press them for my with your hand.
•• Let the mixture cool down for 7-8 hours. Alternatively you can put the mixture in refrigerator if you want to make it soon.
•• After cooling, cut the mixture with a knife in your desired shape, either in square of rectangular shape as you wish.
•• Here sweets are ready to consume. 😄😄
They taste best when consumed fresh, but you can consume them for a week.
A few tips at the end
•• Make the sugar syrup with a single strand, if it goes too thick, sweets will get harder after mixing. They will be not be that soft then.
•• You may increase or decrease the amount of sugar as per your taste.
•• You may add the dry fruits of your choice or you may even skip them if you don't like dry fruits. Alternatively you may add them in the powdered form as I do at times for my daughter.
