Today, I’ll take you through the step-by-step process of how I made my veggie spaghetti.
There’s a famous saying among cooks on social media that “anyone who breaks his/her spaghetti into more than four pieces is a cultist.” 😂 Do you believe that? Drop a comment and let me know!
Ingredients
Spaghetti
Curry
Thyme
Maggi
Onion
Nutmeg
Salt
Bay leaf
Shallot
Vegetables (carrots, green beans, green pepper, and red pepper)
Procedure
I diced my veggies to make sure all my ingredients were ready.
Then, I parboiled the spaghetti. Once the spaghetti became softer, I poured it into a sieve to cool down.
Next, I set a pot on the fire, added groundnut oil, and fried my veggies slightly to make them softer and less crunchy. I added some seasoning at this stage. After achieving my desired texture, I took them off the fire.
In another pot, I added groundnut oil and onions, then fried my tomato paste. I seasoned the sauce to taste and allowed it to cook properly.
When the sauce was ready, I added the cooked spaghetti and stirred thoroughly to mix. Then, I poured in the fried vegetables and mixed everything together.
I let it cook for a few more minutes, and my veggie spaghetti was ready to be served.
