I don’t often eat fish, but when I get the chance to cook salmon, I always get excited at the prospect of pairing the fish with new flavors. This time I thought I would add a little bit of sweet to the savory of the salmon, so I concocted this maple based glaze.
Of course this fish can be prepared myriad ways: on the stove, in the oven, on the grill. I prefer to pan fry my fish so I can keep a close eye on its cooking to ensure it is not over cooked and dry.
Ingredients:
1 pound fresh salmon
2 tablespoons olive oil
1 clove garlic, minced
2 tablespoons maple syrup
2 tablespoons teriyaki sauce
½ teaspoon salt
½ teaspoon ground pepper
1 lemon, sliced
Heat olive oil in a medium skillet on medium-low heat.
In a small dish, mix together the garlic, maple, teriyaki, salt, and pepper. Set aside.
Place the salmon in the pan, skin side down. Cook for about 4 minutes.
Flip the salmon in the pan with a spatula and carefully remove and discard the skin.
Place a spoonful of the maple glaze on the top of the fish and spread it with the back side of the spoon.
Flip the fish and repeat adding/spreading of the glaze on this side of the fish.
Cook for an additional minute, then flip, and cook for one more minute.
