I prepared this post to participate in the Local Food Contest. I will participate in this competition with a recipe from Gaziantep, the gourmet city of Turkey. My dish is stuffed peppers and dried aubergines. I am from Aegean and this stuffing recipe is not made in our region. I met this dish with my husband, who is from Gaziantep, after I got married, and I really liked this dish. I recommend you to prepare this dish.

Before I tell you the list of ingredients needed to prepare our meal, there is something I would like to point out. The most important thing that gives the real flavor to this dish is the tomato paste you will use. I prepare my meal with pepper paste, which belongs to Gaziantep region. I add a spoonful of sweet pepper paste, a spoonful of hot pepper paste and a spoonful of tomato paste into it. This is the main reason why my food is so delicious. I also prepared these pastes myself at home. In another post, I will describe how to make tomato paste.

Ingredients for our meal:

  • Dried bell pepper
  • Dried aubergines
  • Paste
  • Onion
  • Garlic
  • Black pepper, paprika, salt
  • Rice
  • Olive pil

First we wash the rice. Put it in a deep bowl. Add tomato paste, black pepper, paprika and salt to it.

Chop the onion and garlic as small as possible. We add it to our internal mortar. Finally, we add plenty of olive oil. Another thing that gives flavor to this dish is olive oil. Likewise, I recommend using as much garlic as possible.

After bringing all the ingredients together, we mix it well and let it sit for a while.

While we wait for our stuffing, we prepare the eggplant and peppers. Boil the eggplant for 5 minutes and then the peppers for 5 minutes in boiling water. Then we run the eggplant and peppers through cold water and strain.

In this way, we finish all our preparations for stuffing our peppers and eggplants. Then, first, we fill the eggplants with the rice we prepared and place them in the pot. Fill the peppers in the same way and place them in the pot. After filling all the eggplants and peppers, we place the pot on the medium-sized stove.

We place a stone lid on the pot. This will prevent the rice from falling apart while cooking.Add 2 cups of water to the pot. We continue to cook our food on medium heat until it boils, and after it starts to boil, we continue to cook on low heat. My stuffing was cooked in about 30 minutes. But don't forget to check it out.

After turning off the stove, we wait for 10-15 minutes. When the temperature of our food decreases, we put the stuffed peppers and eggplants on the serving plate.
