Yesterday, my friend sent me a picture of an apple pie she baked inviting me to their table to try it. She was joking because she lives in Finland, quite far from my place in Estonia. For me, the way to try it was to ask my friend for the recipe and bake myself, and that was exactly what I did.
If you compare the two top pictures, you will see that I got my pie looking different from my friend's. That is because I added some cinnamon and cut apples into smaller pieces. When you bake, you can also make some changes, why not?
Here you will see my cooking step by step, and I believe you will like to try it too because it is very easy to cook and very tasty to eat.
It is a season for local apples, and I have a lot of them at home. They are not very beautiful to put on the table to eat, but they are excellent for a pie. What I like in this recipe is that you can use quite many apples. You will see it on my final pictures that there will be more apples than dough, really.

Before cooking, I took butter and eggs out of the fridge for they would not be cold, and the butter had time to become soft. I also preheat the oven up to 180 degrees Celcius.
Step 1:
I took nine apples of middle size, cut them into quarters and then core. You can peel the apples before that, but I decided not to.
Step 2:
I mixed 100 gr of butter with 80 gr of sugar, 10 gr of vanilla sugar and a pinch of salt. Butter must become soft, of room temperature before that.
Add two eggs and mix.
Step 3
I measure out 150 grams of flour (I have a special cup-sieve for that), add a teaspoon of baking powder and a teaspoon of ground cinnamon to the flour. Sift this mixture through the sieve directly into the bowl with the previous mixture.
The dough is ready. Not much of it, as you can see.
Step 4
Now I slice the apples and add them to the dough. There are much more apples than dough, and it is alright.
Step5
I put the mixture into the baking dish previously greased with oil.
Step 6
I take one more apple, cut it into halves and cut very thin slices with the vegetable peeler. I cover the top of the pie with them and spread some sugar on the slices of the apples.
When the pie was ready, I could see that it had to be more sugar at the top to caramelize better. Before spreading sugar, it could have been better to put slices of butter at the top and then spread sugar. Well, next time it will be better.
Step 7
I put the baking dish with the pie in the preheated oven and bake for about 30-40 minutes.
The pie was ready, and I invited my other friend to enjoy it with coffee.
